Recipe for Belizean Fry Jacks
Ingredients:
1 1/2 cups flour
1/2 cup milk
1/2 teaspoon salt
1 teaspoon baking powder
1 tablespoon margarine
Oil for frying
Directions:
- In a large bowl, combine the flour, baking powder, salt, and margarine.
- Gradually pour in the warm milk, stirring until a soft dough forms.
- Knead the dough for about 3 to 5 minutes, until smooth and elastic.
- Cover the dough with a cloth, and let it rest for 15 to 20 minutes.
- Separate the dough into balls, and roll thinly (about 1/4-inch thickness) into a tortilla shape. Cut in half.
- Put the oil in a large frying pan over medium-high heat. Fry the dough, turning once until golden brown on both sides.
